The Importance of Starch, Sugar, and Protein

Starch is the most important carbohydrate reserve in plants. It is especially present in cereals such as wheat and corn, or in sources like potato starch. The formation of starch in plants comes from the process of photosynthesis, which allows plants to absorb carbon from the atmosphere and convert it into glucose.

The sugar we use daily in coffee or pastries is sucrose, which is extracted from sugar beet or sugarcane. There are also other saccharide-related compounds like glucose, fructose, dextrose, or polyols that also provide sweetness. These are products derived from sugar.

Protein is an essential component of all living organisms and mainly differs by its amino acid composition. Proteins play an important role in our health due to their nutritional properties. Proteins are extracted from starch milk by centrifugation, then further filtered and dried. Proteins are widely used in both food and animal nutrition.
